For the Garlic Yogurt Sauce

  • 1 cup Plain yogurt Base for the sauce.
  • 2 cloves Garlic, minced Enhances the yogurt flavor.
  • 1 medium Lemon, juice Adds tanginess.

Preparation

  • In a large bowl, mix the ground chicken with the chopped onion and minced garlic until fragrant and thoroughly combined.
  • Add the ground cumin, ground coriander, paprika, cayenne pepper, chopped parsley, chopped mint, salt, and pepper, blending everything together until well mixed.
  • Shape the mixture into oblong patties or mold onto skewers using your hands.

Cooking

  • Preheat your grill or oven to 400°F (200°C).
  • Cook the kofta on the grill for about 12-15 minutes, turning occasionally until they are beautifully golden and cooked through.
  • Alternatively, bake in the oven for about 20 minutes, until they are firm and the internal temperature reaches a safe cooking level.

Garlic Yogurt Sauce Preparation

  • Meanwhile, prepare the garlic yogurt sauce by mixing the yogurt with the minced garlic, lemon juice, and salt in a bowl.
  • Stir the garlic yogurt until it is well blended, letting the flavors develop.

Serving

  • Once the kofta are cooked, serve them warm alongside the garlic yogurt sauce.

Notes

If your kofta feels crumbly while shaping, try adding a little water or an egg to the mixture. Preheat the grill properly for best results. Fresh herbs greatly enhance flavor.
