Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs Crushed graham crackers for the base.

For the Filling

  • 32 oz cream cheese 4 packages (8 oz each), softened.
  • 1 cups sugar Sweetens the filling.
  • 4 large eggs Incorporates air and structure.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 cups sour cream Provides a creamy texture and balances sweetness.

For the Cherry Topping

  • 2 cups fresh or frozen cherries (pitted) Main topping for the cheesecake.
  • 0.5 cups sugar Sweetens the cherry topping.
  • 1 tablespoon cornstarch Thickens the cherry mixture.

Instructions
 

Preparation of the Crust

  • Preheat your oven to 325°F (163°C).
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes, then remove from the oven and let it cool.

Making the Filling

  • In a large mixing bowl, beat softened cream cheese until smooth.
  • Gradually add sugar, mixing until creamy.
  • Add eggs one at a time, beating well after each addition.
  • Mix in vanilla extract and sour cream until fully combined.

Baking the Cheesecake

  • Pour the filling over the cooled crust, smoothing the top.
  • Bake in the preheated oven for 55-60 minutes until edges are set and center is slightly jiggly.
  • Turn off the oven and crack the door. Let the cheesecake cool in the oven for 1 hour.

Preparing the Cherry Topping

  • In a saucepan over medium heat, combine cherries, sugar, and cornstarch.
  • Cook until the mixture thickens, about 5-7 minutes, then let it cool slightly.
  • Once the cheesecake is completely cool, pour the cherry topping evenly over the surface.

Chilling and Serving

  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  • When ready to serve, remove from springform pan and slice.

Notes

If the cheesecake cracks, a generous cherry topping can cover any imperfections. Ensure all ingredients are at room temperature for best texture.
