  • 4 cups baby potatoes, halved or quartered Wash thoroughly before cutting.
  • 1 lb smoked sausage (halal-certified) Slice into quarter-inch rounds.
  • 2 tablespoons olive oil For tossing with potatoes.
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 1.5 cups shredded cheddar cheese Can mix with other favorite cheeses.
  • 0.5 cups sour cream Optional for serving.
  • 0.25 cup fresh parsley, chopped Optional for garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the baby potatoes, then cut them in halves or quarters.
  • Slice the smoked sausage into quarter-inch rounds.
  • In a small bowl, mix the ranch seasoning with garlic powder, onion powder, and black pepper.

Cooking

  • Drizzle olive oil over potatoes in a mixing bowl and sprinkle half of the ranch seasoning mix over them. Toss to coat.
  • Prepare a baking sheet with parchment paper or grease it lightly.
  • Spread the seasoned potatoes evenly on the baking sheet and scatter the sausage slices on top.
  • Roast in the preheated oven for 35-40 minutes, stirring halfway through.
  • Once nearly done, sprinkle cheddar cheese over the dish and return to the oven for another 5 minutes until melted.
  • Garnish with chopped parsley and serve hot with sour cream, if desired.

Feel free to substitute ingredients based on dietary preferences, including plant-based options or different vegetables.
