Vegetable Preparation

  • 2 tablespoons butter For sautéing
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups broccoli florets Fresh or frozen

Casserole Base

  • 3 cups cooked white or brown rice Fluffy and cooked
  • 1 can cream of mushroom or cream of chicken soup 10.5 ounces
  • 1/2 cup sour cream
  • 1.5 cups shredded cheddar cheese Plus extra for topping
  • 1/4 teaspoon paprika Optional
  • to taste salt
  • to taste pepper

Preparation

  • Preheat the oven to 350 degrees Fahrenheit and grease a 9x13 inch baking dish.
  • In a skillet, melt the butter and sauté the chopped onion until golden.
  • Add the minced garlic and stir briefly until fragrant.
  • Bring the broccoli florets to a simmer until softened, or thaw if using frozen.
  • In a mixing bowl, combine cooked rice, sautéed onion and garlic, broccoli, soup, sour cream, and cheddar cheese (reserving some cheese for topping).
  • Season with paprika, salt, and pepper, folding gently to mix.
  • Spread mixture into the greased baking dish and top with remaining cheddar cheese.

Cooking

  • Bake for 25 to 30 minutes or until bubbly and golden.
  • Let the casserole rest before serving for flavors to meld.
