Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Ensure it is at room temperature.
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar Light or dark.
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda Check freshness.
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup semi-sweet chocolate chips

For the cheesecake filling

  • 8 ounces cream cheese, softened
  • 0.5 cup powdered sugar Adjust to taste.
  • 1 teaspoon vanilla extract (optional)

Instructions
 

Preparation

  • Preheat your oven to 375 degrees Fahrenheit.
  • Beat the softened butter with granulated sugar and brown sugar until light and fluffy, approximately 3-5 minutes.
  • Add in the eggs and vanilla extract, mixing until smooth.
  • In a separate bowl, combine flour, baking soda, baking powder, and salt.
  • Gradually mix the dry ingredients with the butter mixture until fully incorporated.
  • Fold in the semi-sweet chocolate chips until evenly distributed.
  • In another bowl, beat cream cheese with powdered sugar and optional vanilla extract until smooth.
  • Scoop and flatten cookie dough, add a dollop of cream cheese filling, fold and roll into balls.

Baking

  • Place the cookie balls on a lined baking sheet, spacing them apart.
  • Bake for about 10 minutes until edges are golden and centers are slightly underbaked.

Notes

Chill dough for 30 minutes if cookies aren't holding shape. Can replace cream cheese with mascarpone for a twist.
