  • 2 pounds bone-in, skin-on chicken thighs Look for chicken that feels firm and has a light pink hue for freshness.
  • 1/4 cup hoisin sauce Provides the signature sweet and savory taste.
  • 2 tablespoons soy sauce Adds depth of flavor.
  • 1 tablespoon rice wine vinegar Provides acidity.
  • 2 teaspoons five-spice powder For warmth.
  • 3 cloves garlic, minced Brings robust aroma and flavor.
  • 1 tablespoon brown sugar Enhances sweetness.
  • 1 tablespoon sesame oil Adds a rich nutty note.
  • 1 cup green onions, thinly sliced Used for garnish.

Instructions
 

Marinating Chicken

  • In a bowl, whisk together hoisin sauce, soy sauce, rice wine vinegar, five-spice powder, minced garlic, brown sugar, and sesame oil.
  • Coat the chicken evenly and let it marinate for at least thirty minutes.

Cooking Chicken

  • Preheat your grill or oven to medium-high heat.
  • For grilling, lightly oil the grates. If using the oven, line a baking sheet with foil.
  • Remove the chicken from the marinade and reserve the marinade for basting.
  • Place the chicken thighs skin-side down on the grill and cook for about four to five minutes.
  • Flip the chicken and cook for an additional four to five minutes.
  • Brush a layer of the reserved marinade on the chicken.
  • For grilling, reduce heat to medium, cover, and allow the chicken to cook for another five to seven minutes.
  • If using the oven, bake for approximately twenty-five to thirty-five minutes, basting every ten minutes.
  • Let the chicken rest for five minutes before slicing.
  • Sprinkle with freshly sliced green onions before serving.

Notes

Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months. Reheat in the oven or microwave.
