Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the cheesecake filling

  • 2 packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped tart apples Granny Smith recommended for tart flavor.
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup caramel sauce Extra for drizzling.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Lightly grease a 9x13 inch baking dish.
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of the prepared baking dish.

Making the Filling

  • In another bowl, beat cream cheese and sugar until smooth and creamy.
  • Add eggs, one at a time, mixing well after each addition.
  • Stir in vanilla extract, followed by chopped apples, cinnamon, and nutmeg.

Baking

  • Pour the cream cheese mixture over the crust, smoothing with a spatula.
  • Drizzle caramel sauce over the top and swirl gently with a knife.
  • Bake for 30-35 minutes, or until set and slightly golden on top.

Cooling and Serving

  • Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
  • For best results, drizzle with additional caramel before serving.

Notes

For variation, use cinnamon graham crackers for added spice, or consider using spiced pears instead of apples. These bars can be frozen for up to three months.
