Preparation

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Slice the smoked sausage into rounds and add to the skillet, cooking until browned and slightly crisp.
  • Chop the onion and mince the garlic; add them to the skillet once the sausage is golden.
  • Stir in the diced bell peppers and cook for a few minutes until they are tender.
  • Add the rice and Cajun seasoning, ensuring every grain is coated.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Reduce the heat to low, cover, and let simmer for about 20 minutes until the rice is tender.
  • Season with salt and pepper to taste before serving.

Notes

This dish can be adjusted by substituting sausage for chicken or shrimp. For variety, incorporate seasonal vegetables or use quinoa instead of rice.
