For the Cake

  • 390 grams all-purpose flour
  • 320 grams dark brown sugar
  • 15 grams baking powder
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 2 teaspoons cardamom
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon cloves
  • 140 grams unsalted butter at room temperature
  • 100 grams neutral oil
  • 283 grams whole milk at room temperature
  • 2 units eggs at room temperature
  • 1 tablespoon vanilla extract

For the Cream Cheese Frosting

  • 227 grams unsalted butter at room temperature
  • 12 ounces cold cream cheese
  • 340 grams sifted powdered sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine all-purpose flour, dark brown sugar, baking powder, and kosher salt.
  • Add cinnamon, cardamom, ginger, allspice, nutmeg, and cloves to the mixture and stir until well incorporated.
  • In another bowl, cream together unsalted butter and neutral oil until light and fluffy.
  • Gradually add whole milk, eggs, and vanilla extract to the creamed mixture, beating until smooth.
  • Fold the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into a greased or lined cake pan and smooth the surface.
  • Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Frosting

  • In a mixing bowl, beat together unsalted butter and cold cream cheese until creamy.
  • Gradually add sifted powdered sugar, mixing until silky and smooth.
  • Once the cake is completely cooled, frost generously with cream cheese frosting and sprinkle cinnamon on top.

Notes

Ensure the cake is completely cooled before frosting for a clean finish. If your cake has domed excessively, level the top with a serrated knife before frosting.
