  • 1 cup cream of mushroom soup Can substitute with a plant-based alternative for a vegan option.
  • 0.5 cups milk Use regular or plant-based milk.
  • 0.5 teaspoon garlic powder Add additional garlic for more flavor if desired.
  • to taste salt and pepper Adjust according to preference.
  • 0.5 cups breadcrumbs Optional, for topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice, broccoli florets, and shredded cheddar cheese. Stir until well mixed.
  • Blend in the cream of mushroom soup and milk until a creamy mixture forms.
  • Add garlic powder, salt, and pepper to taste, and stir to combine.
  • Transfer the mixture to a greased baking dish and smooth it out.
  • Sprinkle breadcrumbs on top if desired.
  • Bake for 25 to 30 minutes until the casserole is bubbly and golden on top.
  • Let it cool slightly before serving.

Notes

For added flavor, a splash of lemon juice or red pepper flakes can be incorporated. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
