Main Ingredients

  • 2 cups fresh broccoli florets Fresh is preferred, but frozen can be used.
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 0.5 cups sour cream
  • 0.25 cups butter
  • 0.25 cups all-purpose flour
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Preparation

  • Preheat the oven to 350°F.
  • In a medium saucepan, melt the butter over medium heat.
  • Whisk in the flour to create a roux and let it cook until golden.
  • Gradually whisk in the milk, stirring constantly until thickened.
  • Stir in the sour cream, garlic powder, salt, and pepper.

Mixing

  • In a large bowl, combine cooked rice, fresh broccoli, and half of the cheddar cheese.
  • Pour the cheese sauce over this mixture and fold gently.

Baking

  • Transfer to a greased baking dish and top with remaining cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes until bubbly and golden.

Notes

For added crunch, consider topping with breadcrumbs before baking. This casserole can also be made ahead of time and stored in the fridge overnight.
