  • 2 cups chocolate cookie crumbs Use high-quality chocolate cookies for the best flavor.
  • 6 tablespoons unsalted butter, melted Melted before mixing with cookie crumbs.

Filling

  • 8 ounces cream cheese, softened Ensure it's softened for a smoother mixture.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract For enhancing flavor.
  • 1 cup heavy whipping cream Whipped to stiff peaks before folding.

Topping

  • 2 cups cherry pie filling Can be substituted with fresh cherries.
  • 1/4 cup chocolate shavings For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a bowl, combine chocolate cookie crumbs and melted butter, then press this mixture into the bottom of a springform pan to create the crust.
  • Bake the crust for 10 minutes until slightly golden and fragrant, then let it cool completely.

Filling

  • In a bowl, beat softened cream cheese until smooth and creamy.
  • Gradually add powdered sugar and vanilla extract, mixing well until fully incorporated.
  • In another bowl, whip heavy whipping cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined.
  • Spread the cream cheese filling over the cooled crust, smoothing it out evenly.

Topping and Chilling

  • Spoon cherry pie filling on top of the cream cheese layer, spreading it gently across the surface.
  • Refrigerate for at least 4 hours, or until the cheesecake is set and firm.
  • Before serving, garnish with chocolate shavings.

Notes

Store covered in plastic wrap in the refrigerator for up to five days. For longer storage, freeze slices wrapped tightly in plastic.
