  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup Biscoff cookie butter
  • 0.67 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour plus 1 tablespoon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon extra cookie butter for the tops

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the unsalted butter, Biscoff cookie butter, and light brown sugar until fluffy.
  • Add the egg and vanilla extract to the mixture and blend until combined.
  • Gradually add the all-purpose flour, baking soda, and salt to form a soft dough.
  • Using a large cookie scoop, place dough balls on a parchment-lined baking tray, spacing them three inches apart.
  • Top each dough ball with an additional teaspoon of cookie butter.

Baking

  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Let the cookies cool completely on a wire rack before serving.

Notes

For a dairy-free option, replace unsalted butter with coconut oil. For extra flavor, consider adding chopped nuts or spices.
