Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon, skinless, cut into bite-sized cubes Freshness matters for best flavor.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs Coated for crunchiness.
  • 1 tbsp olive oil Use for crisping.
  • 1/2 cup mayonnaise For the bang bang sauce.
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust for spice level.
  • 1 tsp honey Optional for sweetness.
  • 1/2 none juice of lime Adds freshness.

For Serving

  • 2 cups cooked jasmine rice or cauliflower rice Base layer.
  • 1 cup shredded purple cabbage For color and crunch.
  • 1 none avocado, sliced Creaminess.
  • 1/2 cup shredded carrots For added texture.
  • 2 none green onions, sliced For garnish.
  • to taste none fresh cilantro and sesame seeds For garnish.

Instructions
 

Preparation

  • Preheat your oven or air fryer.
  • Season the salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
  • Prepare the panko breadcrumbs with olive oil and lime juice.

Cooking

  • Coat each salmon cube in panko breadcrumbs.
  • Bake or air-fry the salmon until golden and crispy.

Sauce Preparation

  • Blend mayonnaise, sweet chili sauce, sriracha, and honey until creamy.

Assembly

  • Serve the salmon bites over jasmine rice or cauliflower rice.
  • Top with purple cabbage, avocado, carrots, and green onions.
  • Garnish with cilantro and sesame seeds.

Notes

For variations, consider using shrimp instead of salmon. Store leftovers in a covered container in the fridge for 2-3 days or freeze for up to one month.
