  • 4-6 Sweet potatoes Choose medium to large sizes for even baking.
  • 2 tablespoons Olive oil Can substitute with coconut oil or avocado oil.
  • to taste Salt Sprinkle generously.
  • to taste Pepper Freshly cracked preferably.

Preparation

  • Preheat your oven to 425 degrees Fahrenheit.
  • Wash and scrub the sweet potatoes, then dry them with a towel.
  • Poke several holes in each sweet potato using a fork.
  • Rub the sweet potatoes with olive oil, then sprinkle with salt and pepper.
  • Place the sweet potatoes on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for about 45 to 60 minutes or until they are tender.
  • Remove from the oven and let cool slightly before serving.

Notes

If sweet potatoes are not cooking evenly, consider cutting larger potatoes in half lengthwise. Serve with yogurt, herbs, or maple syrup for variation.
