Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchinis into thin rounds of uniform thickness.
  • In a bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
  • In another bowl, pour in olive oil and dip each zucchini slice to help the breadcrumb mixture stick.

Baking

  • Coat each zucchini slice in the breadcrumb mixture on both sides.
  • Line a baking sheet with parchment paper and arrange the zucchini slices in a single layer.
  • Bake for 15 to 20 minutes, or until they are golden brown and crisp.

Serving

  • Once out of the oven, serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For best results, enjoy fresh. You can also freeze slices for up to three months.
