  • 1 cup dark chocolate, finely chopped Use quality chocolate for best flavor.
  • 1/2 cup heavy cream
  • 1/2 cup Bailey's Irish Cream Adjust amount for desired flavor intensity.
  • cocoa powder cocoa powder for dusting
  • chocolate sprinkles chocolate sprinkles for garnish Optional for decoration.

Instructions
 

Preparation

  • Chop the dark chocolate into small pieces and place it in a heatproof bowl.
  • In a saucepan, combine heavy cream and Bailey's Irish Cream and stir over medium heat until it simmers.
  • Pour the cream mixture over the chopped chocolate, letting it sit for a moment before whisking until smooth.
  • Transfer the ganache to a shallow dish, smooth the top, cover with plastic wrap, and chill in the refrigerator for 30 minutes.

Shaping and Coating

  • Once the ganache is firm, use a small scoop to portion it into balls.
  • Roll each ball in cocoa powder or chocolate sprinkles to coat.

Serving Suggestions

  • Serve on a platter with fresh mint leaves and pair with coffee or Irish whiskey.

Notes

For longer storage, freeze the truffles in a single layer for up to two months. Allow to thaw in the fridge before serving.
