Ingredients
  

For the Cheesecake Filling

  • 2 dozen chocolate-covered butter cookies Crushed into fine crumbs
  • 8 oz mascarpone cheese
  • 0.5 cup Baileys Irish Cream
  • 1 cup powdered sugar Add more for sweetness if desired
  • 1 tsp vanilla extract

For Coating

  • 0.5 cup chocolate chips Melted for coating

Instructions
 

Preparation

  • Crush the chocolate-covered butter cookies in a food processor until fine.
  • In a mixing bowl, combine the crushed cookies, mascarpone cheese, Baileys Irish Cream, powdered sugar, and vanilla extract. Mix until well incorporated and smooth.
  • Roll the mixture into small balls, about one inch in diameter.

Coating

  • Melt the chocolate chips until smooth in a microwave or double boiler.
  • Dip each ball into the melted chocolate, ensuring they are fully coated.
  • Place the coated balls on a lined baking sheet and refrigerate until firm, about 15 minutes.

Serving

  • Serve the Baileys Cheesecake Balls chilled.

Notes

Store in an airtight container at room temperature for up to two days, or in the refrigerator for up to one week. They can also be frozen for up to three months.
