  • 2 large carrots, peeled and sliced Carrots provide natural sweetness and color.
  • 4 cups chicken broth Use high-quality broth for better flavor.

For Seasoning

  • 1-2 tsp salt Adjust to taste.
  • 1 tsp black pepper Freshly ground for better flavor.
  • 1 tsp garlic powder Or substitute with 4 cloves of minced garlic.
  • 1/4 tsp dried thyme Adds an aromatic flavor.
  • 1/2-1 tsp red chili flakes Optional for heat.

For the Soup

  • 16 oz gnocchi Provides a chewy texture.
  • 2 cups heavy cream or half-and-half For a rich and creamy base.
  • 2 cups shredded cheddar cheese Medium or sharp for best flavor.

Preparation

  • Cook the bacon in a large pot until crisp, then chop it into bite-sized pieces and set aside.
  • In the same pot, melt the butter or heat olive oil over medium heat.
  • Add the diced onion and sliced carrots, sautéing until softened.

Cooking

  • Pour in the chicken broth and bring to a gentle simmer.
  • Season with salt, black pepper, garlic powder, dried thyme, and red chili flakes.
  • Stir in the gnocchi and cook for about 2 minutes.
  • Add the heavy cream and melt in the cheddar cheese, stirring until smooth.
  • Fold in the reserved bacon and adjust seasoning as needed.

Notes

For garnishing, use extra crispy bacon and sprinkle with fresh herbs. Great with crusty bread or a salad.
