Preparation

  • Gather ingredients, including the large egg at room temperature, ground mustard, salt, lemon juice, and avocado oil.
  • Place the large egg, ground mustard, salt, and lemon juice into a wide-mouthed jar.
  • Pour the avocado oil gently on top.
  • Insert the immersion blender at the bottom of the jar.
  • Blend the mixture for ten to fifteen seconds until it begins to thicken.
  • Slowly lift the blender while blending to incorporate the oil fully.
  • Taste and adjust the seasoning as desired.
  • If too thick, add a splash of water to achieve your preferred consistency.
  • Transfer the mayonnaise to a clean jar.
  • Label and store in the refrigerator for up to one week.

Notes

Ensure ingredients are fresh for the best flavor. If the mayonnaise does not thicken, check that the egg is at room temperature.
