Ingredients
  

Roasted Vegetables

  • 3 cups butternut squash, peeled, seeded, and cubed
  • 340 grams Brussels sprouts, trimmed and halved

Pasta and Sausage

  • 225 grams bow tie pasta
  • 340 grams cooked smoked sausage (cajun, andouille, or regular)

Flavoring Ingredients

  • 1 tablespoon olive oil (for tossing squash)
  • 2 tablespoons olive oil (for Brussels sprouts)
  • 1 tablespoon olive oil (for the skillet)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 200 degrees Celsius.
  • Peel, seed, and cube the butternut squash into bite-sized pieces.
  • In a mixing bowl, toss the squash with one tablespoon of olive oil, salt, and pepper.
  • Spread the seasoned squash across a parchment-lined baking sheet.
  • Let the squash roast for 15 to 20 minutes until caramelized and tender.
  • Trim and halve the Brussels sprouts, then toss them with two tablespoons of olive oil, salt, and pepper.
  • Spread the Brussels sprouts on a separate parchment-lined baking sheet and roast for 20 to 30 minutes.

Cooking Pasta and Sausage

  • Bring a large pot of salted water to a boil and cook the bow tie pasta until al dente.
  • Reserve half a cup of the pasta water before draining.
  • In a large skillet, heat one tablespoon of olive oil over medium heat.
  • Slice the smoked sausage into thick coins and brown in the skillet.
  • Remove the sausage from the skillet once browned.
  • In the same skillet, add minced garlic and sauté until fragrant.
  • Add butter and melt it down, then toss in the cooked pasta, mixing with the melted butter and seasonings.

Combining Ingredients

  • Add the roasted butternut squash, Brussels sprouts, and browned sausage to the skillet with the pasta.
  • Toss gently to combine the ingredients and adjust seasoning as needed.
  • Finish with fresh thyme leaves before serving.

Notes

For a vegetarian option, replace smoked sausage with plant-based sausage or chickpeas. To make this gluten-free, use gluten-free pasta.
