  • 2 cups cake flour
  • 1.5 teaspoons baking powder Ensure freshness
  • 1 pinch salt
  • 1 cup softened butter At room temperature
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup milk
  • 0.5 cups melted white chocolate
  • 1 teaspoon raspberry extract

Preparation

  • Preheat the oven to 350°F and grease a six-inch round cake pan.
  • In a bowl, combine cake flour, baking powder, and a pinch of salt.
  • In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Incorporate the flour mixture and milk alternately, mixing until just blended.
  • Stir in melted white chocolate and raspberry extract.

Baking

  • Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until golden and a toothpick comes out clean.

Cooling & Assembling

  • Allow the cake to cool, then slice in half horizontally.
  • Spread raspberry jelly between the two layers.
  • Frost the outside with vanilla buttercream and decorate as desired.

Notes

To enhance flavor, use fresh raspberries and consider dark chocolate instead of white. Leftovers improve in flavor overnight.
