Ingredients
  

For the peanut butter filling

  • 1 cup unsalted butter, softened
  • 1.5 cups creamy peanut butter
  • 4 cups powdered sugar Adjust for consistency
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

For the chocolate coating

  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening Optional for smoother chocolate
  • white decorating icing for football laces

Preparation

  • In a large bowl, cream together the softened butter and peanut butter until smooth and well combined.
  • Gradually add the powdered sugar, mixing on low speed until fully incorporated.
  • Stir in the vanilla extract and salt. The mixture should be thick and slightly stiff.
  • If the filling is too soft, add a little more powdered sugar. If it’s too dry, add a tablespoon of milk or cream.
  • Cover the bowl and chill it in the refrigerator for at least thirty minutes.
  • Remove the filling from the refrigerator and use a spoon or cookie scoop to portion out equal-sized amounts.
  • Roll each portion into an oval shape, tapering the ends slightly to resemble a football.
  • Place the shaped footballs on a parchment-lined baking sheet.
  • If the filling becomes too soft to handle, return it to the refrigerator for a few minutes to firm up.
  • Once all the footballs have been shaped, return the baking sheet to the refrigerator and chill for another thirty minutes.

Coating

  • In a double boiler or microwave-safe bowl, melt the chocolate chips and vegetable shortening (if using) until smooth and glossy.
  • If using a microwave, heat the chocolate in thirty-second intervals, stirring in between to prevent burning.
  • Once the chocolate is melted, remove it from heat and let it cool slightly.
  • Remove the chilled peanut butter footballs from the refrigerator.
  • Using a fork or dipping tool, carefully dip each football into the melted chocolate, leaving a portion of the peanut butter exposed at the top.
  • Gently tap off any excess chocolate.
  • Place the dipped footballs back on the parchment-lined baking sheet.
  • Before the chocolate sets, use white decorating icing to pipe on the football laces.
  • Let the chocolate set completely before serving, or speed up the process by placing the baking sheet in the refrigerator.

Notes

These delightful bites can be stored in an airtight container at room temperature for up to one week or in the refrigerator for up to two weeks. They can also be frozen for up to three months.
