  • 4 large eggs At room temperature for better incorporation.
  • 1 cup buttermilk For a delightful tanginess.
  • 1 teaspoon pure vanilla extract
  • 1.5 teaspoons baking powder

  • 1 dash salt

Strawberry Filling

  • 2 cups fresh strawberries Washed and hulled.
  • 1/4 cup sugar

Chocolate Frosting

  • 1 cup unsalted butter Softened to room temperature.
  • 4 cups powdered sugar
  • 1/3 cup unsweetened cocoa powder
  • splash milk To achieve desired consistency.

Preparation

  • Preheat the oven to 350 degrees Fahrenheit and grease and flour two 6-inch round cake pans.
  • In a mixing bowl, soften the unsalted butter until airy and fluffy.
  • Add granulated sugar and cream together until light and fluffy.
  • Incorporate eggs one at a time, mixing well after each addition.
  • Sift together all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  • Fold the sifted mixture into the butter-sugar mixture, alternating with buttermilk and vanilla until smooth.

Baking

  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for approximately 30 minutes, or until a toothpick inserted comes out clean. Let cool completely before removing from pans.

Strawberry Filling Preparation

  • Wash and hull the strawberries, then slice them.
  • In a medium saucepan, combine strawberries and sugar over moderate heat. Stir until the mixture thickens.

Assembly

  • Place one cake layer on a serving plate, spread strawberry filling over the top.
  • Add the second layer and press gently.
  • Prepare frosting by creaming butter, adding powdered sugar and cocoa powder. Mix until smooth, adding milk for desired consistency.
  • Frost the top and sides of the cake, and decorate with fresh strawberries.

Notes

Allow cake to cool completely before frosting. For added flavor, consider adding almond extract to the frosting.
